Osso Buco is a hearty, full-flavoured cut of beef, traditionally prized for slow braising. Cooked gently on the bone, it develops exceptional depth of flavour as the connective tissue softens and the marrow slowly melts, leaving the signature hollow bone that gives osso buco its name—literally meaning “bone with a hole.”

As it cooks, the marrow enriches the dish with natural vitamins and minerals while transforming the braising liquid into a deeply savoury, glossy, and luxuriously thick sauce that is as nourishing as it is indulgent.
100% Pasture Fed Osso Buco
To defrost the osso buco, place it—still in its packaging—into a bowl of cool water and leave for approximately 30 minutes.
Heat a large, heavy-based casserole dish on the hob over high heat. Once the pan is sizzling hot, add the osso buco and sear well on both sides until deeply browned.
Add a couple of halved onions, a whole bulb of garlic, a handful of fresh garden herbs, a few glasses of red wine, and a generous pour of pure beef broth to the pan.
Cover with a lid and transfer to a preheated oven set to around 150°C. Cook gently for around 5 hours—the longer it cooks, the more tender and flavourful it becomes.
